Chocolate Oatmeal Balls

Clearly I'm on a chocolate kick and the holiday season is making me feel nostalgic for Sweden so here's the all-time easiest recipe I know (like actually, I've made it with pre-schoolers). Chocolate oatmeal balls are the easy no-bake treat that everyone in Sweden learns as a kid. Everyone can get involved no matter their age because you just dump the ingredients in a bowl, mix them together, and then roll them into balls. They're also my go-to when I'm craving something sweet but feeling lazy. Traditionally chocolate oatmeal balls are rolled in pearl sugar (pictured here) - I swear it's sugar and not salt! 

Chocolate Oatmeal Balls

Makes about 24 balls 

  • 1 stick unsalted butter, softened
  • 1/2 cup sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 1/2 cups oats (old-fashioned or quick-cooking)
  • 1 teaspoon vanilla extract 
  • 3 tablespoons cold strong coffee or water
  • Pearl sugar, sprinkles or coconut, for rolling

In a mixing bowl, combine all ingredients and mix together using a spatula or your hands, until well incorporated. Chill in fridge for 20 minutes. 

Shape mixture into balls and roll in desired coating (I used traditional Swedish pearl sugar but you can use sprinkles, sparkling sugar, coconut, or whatever else your heart desires). Serve and enjoy!
