Chocolate PB Caramel Candy Bars

I'm in the middle of figuring out whether or not I need to move out of my apartment in September and find a new place. This wouldn't be an issue except for that I live in New York, the world's capitol of shitty housing where finding an apartment means trudging through countless cockroach-infested closets before you end up forking out half a year's salary in broker fees to get yourself a room that fits a bed and an oven that isn't blocked by the refrigerator (true story). Can you tell that NYC and I have a love/hate relationship? Until that's all cleared up I'm doing my best to think about anything else, and nothing cheers me up like some time in the kitchen and feeding other people delicious things. 

In college my roommate and I would make these bars, call friends to tell them we had made them, and then proceed to almost finish the bars before anyone even got to our apartment. I'm relatively confident that if you combine sugar, chocolate, peanut butter, and Ritz crackers it actually makes crack. 

Like most things I make, this is an incredibly easy recipe to follow. The only cooking you have to do is boiling graham cracker crumbs, sugar, butter and milk together to make caramel. Then you layer that caramel with Ritz crackers and top all of it with melted chocolate (which you can melt in the microwave) mixed with peanut butter! So go ahead and try it out! But make sure you have people to serve it to or prepare to consume the entire thing yourself... 

Chocolate PB Caramel Candy Bars

Adapted from Buns in My Oven 

Makes one 9x13 pan (approximately 24 candy bars)

  • 1 1/2 cups crushed graham crackers
  • 1 cup granulated sugar
  • 3/4 cup brown sugar (I prefer dark brown but light works too)
  • 3/4 cup unsalted butter, cubed
  • 1/3 cup milk (whole or 2% work just fine) 
  • 2-3 sleeves Ritz crackers 
  • 1 1/2 cups chocolate chips
  • 1 cup peanut butter 

Grease a 9x13 pan and create a single layer of Ritz crackers covering the entire bottom of the pan. 

In a large saucepan, combine graham crackers, sugars, butter and milk. Bring to a boil, stirring constantly and continue to boil for 4 minutes.

When the caramel is cooked, pour half of it carefully over the Ritz crackers, distributing it evenly. Add a second layer of Ritz crackers and pour remaining caramel over it. Top with on last layer of Ritz crackers. 

In a microwave safe bowl or in a double boiler on the stove, melt chocolate and mix in peanut butter until combined. Pour melted chocolate peanut butter mixture over Ritz and caramel layers and spread to coat evenly. 

Refrigerate to allow chocolate to set and cut into squares to serve!
