Strawberry Balsamic & Mint Pops

I moved apartments last week and I now have a patio. This is HUGE by New York standards. I have a dishwasher for the first time in six years too so I've essentially hit the real estate jackpot. Naturally I spent all weekend alternately running apartment-related errands and sitting on the patio drinking margaritas and eating homemade popsicles. 

I was introduced to the strawberry-balsamic-herb flavor combination in culinary school when we learned about macerations and made a macerated strawberry and balsamic dish with basil and mint and I've been obsessed ever since. I adapted this recipe from the People's Pops cookbook to accommodate those flavors that I love... 

Strawberry Balsamic & Mint Pops

Recipe adapted from People's Pops

Makes 10 pops

  • 4 cups strawberries, hulled (about 1 pound)
  • 1/2 cup simple syrup (see note)
  • 1 tablespoon freshly squeezed lemon juice
  • 3-4 tablespoons balsamic vinegar
  • 1/4 cup mint leaves, roughly chopped 

In a blender, combine strawberries, simple syrup and lemon juice. Add balsamic vinegar, one tablespoon at a time, tasting as you go until you hit your desired flavor. Blend in mint leaves. 

Pour into pop molds, insert sticks and freeze until solid, 4 to 5 hours. Run under hot water to unmold and transfer to plastic freezer bags for storage or serve immediately. 

Note: To make simple syrup, combine 1/2 cup sugar and 1/2 cup water in a saucepan and heat over medium until sugar dissolves. Allow to cool before using.
