Cardamom Vanilla & Chocolate Coconut Overnight Oats

I don't have kids and I don't start work super early but I'm the type of person who needs at least 8 hours of sleep per night and no matter what I do, I never have time to make breakfast in the morning. My solution to this problem is either making myself a jar of yogurt, frozen fruit and granola the night before, or throwing together some overnight oats.

Overnight oats and chia puddings are super trendy right now but somehow everybody seems to make the same two or three flavors. To shake things up I've been experimenting with different spice and add-on combinations and every now and then it turns out to be a real hit (and every now and then I end up eating some really gnarly oats). My all-time favorite? Cardamom vanilla. Not surprising since I'll eat pretty much anything with cardamom in it... 

Cardamom Vanilla Overnight Oats

Makes 1 serving 

  • 1/2 cup quick-cooking oats
  • 1 tablespoon chia seeds (optional)
  • 2/3 milk (any kind of cow's, soy or nut milk works here)
  • 1-1 1/2 teaspoon maple syrup (adjust according to how sweet you want it)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cardamom

Combine all ingredients in a jar with a lid. Place lid on jar (make sure it's sealed well) and shake until ingredients are evenly combined. Refrigerate at least 2 hours or overnight. 

Chocolate Coconut Overnight Oats

Makes 1 serving 

  • 1/2 cup quick-cooking oats
  • 1 tablespoon chia seeds (optional)
  • 2/3 milk (any kind of cow's, soy or nut milk works here)
  • 1-1 1/2 teaspoon maple syrup (adjust according to how sweet you want it)
  • 2 teaspoons unsweetened cocoa powder
  • 1 tablespoon unsweetened coconut, plus more for garnish

Combine all ingredients in a jar with a lid. Place lid on jar (make sure it's sealed well) and shake until ingredients are evenly combined. Refrigerate at least 2 hours or overnight. Sprinkle with more coconut before eating.
