Dark Chocolate Fudge Brownies

Happy Valentine's (or Gal-entine's) Day! I don't have very strong feelings about this day in general but I do support any holidays that encourages you to eat and buy candy and chocolate. In honor of this chocolate-filled day, and Valentine's candy going on sale tomorrow, I made super dark, super fudge-y brownies.

Chocolate Chip Cookie for One

Food & Wine's amazing test kitchen editor, Justin Chapple, recently published this genius recipe for a single cookie, so you can bake and have a cookie without accidentally have a whole dozen (something that happens to me fairly regularly)! Obviously I had to try it immediately and now I'm sharing it with you. It's not my all-time favorite chocolate chip cookie but it definitely gets the job done. I ended up making myself two cookies because you just can't go cold turkey from a dozen to ONE. Bonus: the dough doesn't have egg in it so technically you could just go ahead and eat that... 

Chocolate S'mores Cookies

The polar vortex is hitting the eastern half of the US with full force and news outlets and government officials are actually telling people not to go outside (again). To warm up your apartment a little more and keep yourself occupied, turn on your oven and bake some cookies!

Banana Cake with Milk Chocolate Frosting

So we all survived the snow storm that hit the east coast yesterday. New York got a ridiculous amount of snow and walking 5 blocks to Whole Foods yesterday morning was the most intense workout I've done in months, but this morning I'm actually incredibly impressed by NYC's ability to clear snow and get traffic moving. The piles of snow and cold temps still have me craving comfort food and HGTV marathons though, so that's exactly what I did today...

Cardamom Milk Chocolate Truffles

I think cardamom is the most delicious and underrated spice out there. It's the seed of a plant family grown mainly in India and is unsurprisingly used a ton in Indian cooking. Interestingly enough it's seen a lot in Scandinavian baking too. Rumor has it the vikings traveled east to trade (and possibly pillage and plunder) and brought the spice back to northern Europe where it grew to become part of the local cuisine. Whoever is to blame, I'm a fan. 

Chocolate Oatmeal Balls

Clearly I'm on a chocolate kick and the holiday season is making me feel nostalgic for Sweden so here's the all-time easiest recipe I know (like actually, I've made it with pre-schoolers). Chocolate oatmeal balls are the easy no-bake treat that everyone in Sweden learns as a kid. Everyone can get involved no matter their age because you just dump the ingredients in a bowl, mix them together, and then roll them into balls.
